Healthy, Non-alcoholic St. Patrick’s Day Beverages – Green Smoothies
For the health conscious and expectant moms, here are a few green St. Patrick’s Day beverages that are completely non-alcoholic. Green smoothies are a fun and exciting way to celebrate St. Patrick’s Day and healthy living at the same time.

“Before you commit to a glass of green beer to celebrate St. Patrick’s Day, consider something delicious, festive, healthy and devoid of food coloring instead: a green smoothie,” says Katie Cycan, a representative for Vita-Mix. “Green smoothies – one part green veggie, one part fruit, one part ice or water – are a great way to get a daily dose of vitamins and nutrients including calcium, iron, fiber, vitamin C, calcium, vitamin A, and protein from fresh, whole foods.

“Green smoothies also contain carotenoids that may help protect against macular degeneration and folate to guard against heart disease and cancer. Yield: 4 cups (960 ml)
Speed: Variable to High
Time: 1 1/2 minutes

1 cup green grapes
1 (130 g) orange, peeled
1/2 Bartlett pear
1 (120 g) banana, fresh or frozen
1 cup kale
1/2 cup water
2 cups ice cubes

Place all ingredients into Vita-Mix container and secure the lid. Select VARIABLE speed #10, then to HIGH for 1.5 minutes. Turn machine off.

Serve immediately.

Vita-Mix’s Going Green Smoothie

Yield: 3.5 cups

1 cup green grapes
1/2 cup pineapple
2 cups fresh spinach
1/2 ripe banana
1/2 cup water
1 cup ice

Place ingredients into the Vita-Mix container and secure lid. Select Variable 1. Turn machine on and quickly increase to Variable 10, then to High. Blend for 60 seconds.

Yield: 3 1/2 cups

2 cups fresh, ripe pineapple, with core (or a 2″ thick slice)
1 stalk celery (7″stalk)
1 cup spinach leaves, gently packed
4 ounces lowfat vanilla yogurt or vanilla soymilk
2 cups ice
Sweetener to taste, if pineapple is a bit tart

Place all ingredients into the wet blade container of the Vita-Mix. Turn the machine on variable speed #1 and quickly increase the speed to #10, then flip the switch up to High Speed and process for 60 seconds.
